Recipe: Easy Peasy Homemade Thanksgiving Cranberry Sauce

Happy Thanksgiving Day everyone!
Or Happy ThankYouGivings Day as we say in my family :)
I'm sharing one of my favorite (and easy) recipes to make for the special day.
Hope your day is awesome and family drama is minimal!


Easy Peasy Lemon Squeezy Cranberry Sauce

1 lb. fresh cranberries
1 c. water
1 1/2 c. sugar

Rinse the berries in a colander and remove stems and bad berries.

In a medium saucepan, heat the water and sugar until the sugar is dissolved. Then bring the syrup up to a boil and pour in the cleaned berries. Adjust the heat so the mixture maintains a simmer and cook until all the berries pop or crack open, about five to seven minutes.

Take the sauce off the heat at this point, or simmer it down to the desired thickness. Remember the sauce will thicken a little while cooling. Chill overnight in the refrigerator before serving.

While simmering the berries, additional ingredients can be added for more flavoring such as orange zest or spices like cinnamon. (I don't. I'm a purist)


Celebrate Thanksgiving a Day Early at Pretend City!


We have the entire week off school - woohoo!!!
But that leaves me with a lot of time to keep my two littles engaged and out of trouble.
So, we're headed to Pretend City to celebrate Thanksgiving a day early!
You could join us!

Here's an outline of the day's festivities:

• Art Studio - Smart Art – Have a gobbling good time with this funny smart art activity. You and your child will learn a little bit about turkeys, while having a fun snood to smile with at Thanksgiving.
• Sensational Story Time - Gobble gobble up these books for a Thanksgiving treat! From hilarious turkeys to holiday history, your children will learn and engage.
• Good To Go Game - It wouldn’t seem like Thanksgiving time without post-feast football activities. Join us in fun, physical, activity games, like Free the Fowl and Turkey Trot, to develop gross motor skills and get ready for a full holiday belly!
• Listen & Learn – Join us to Do the Turkey Poke while learning about the farm in these fun listen and learn music and movement times.

 All the day's activities are included with paid admission for the day.

I can't believe it's next week.
I'm in the throws of organizing the Kinder Thanksgiving Feast,
so we're all sort of crazy around here.
However, I've come to realize I like it crazy.

Thanksgiving Garland

I am totally in love with this changeable garland
tutorial from Twinkle and Twine.

So, since I was hosting book club this week
and really wanted to the Thanksgiving
decorations up for the evening,
I decided the day of the meeting to make one.
Awesome idea, right?
It's always great to start new projects
when you have company coming and the house
needs to be cleaned.


I am so in love with how it turned out.
I also cut out the word {HAPPY},
but I ran out of time to top stitch the letters,
so right now it just says Thanksgiving.


I can't decide whether to leave it or finish the {HAPPY}.
What do you think?


I also thought I might make more letters so that I
can change it to say:
THANKFUL, BE THANKFUL, or GIVE THANKS
whenever I want.


Right now I'm just feeling proud of myself
for finishing something I Pinned!

TOO Cute Tuesday: Linky Par-tay!

So, because I'm a crazy woman,
I decided on Thanksgiving morning to make my daughter a shirt :)

And then when JT saw it, he said he needed one too.
So, about an hour before we had to leave for Thanksgiving dinner,
I made him one too.
My husband questions my sanity hourly :)

We've had such a low turnout,
that I decided to make it just once a month.

Relaxing Day

This was our last full day here so we spent it relaxing around the campsite.  We were recuperating a little from yesterday’s long walk actually.  We did still take a bike ride through the CG to look at all the nice sites here.  They are definitely filling up for the long holiday week end.  This is our site #111.

It’s pretty private although the fire pit area is opened to the next campsite.  We prefer a site surrounded by plants and trees as long as the satellite dish receiver works.  Generally the sites on the right-hand side of the road have a more private patio area.  These folks are definitely set up for the holiday.  They have friends and family staying at several other sites here like a family reunion.

I know turkeys are the symbol of Thanksgiving, but I’ve grown accustomed to the beautiful birds of the marsh here.  The egrets and herons, although the mosquitoes have been almost as big and most plentiful.

We enjoyed the afternoon and evening sitting by the campfire.  Maybe it’s just me, but I can get a little testy on our last day at a beautiful place.  I know I hate leaving here.  I think full-timing will be quite a bit different because I’ll look forward to going to  another nice place.  We’ll be on the road tomorrow along with a lot of people so I’ll wish you all a…

Another Perfect Day

We slowly welcomed the day and took our e-bikes for a nice little ride around the CG.  There is a nice Education Center at the marsh boardwalk that was opened so we went in for a look around.  There were a few aquariums and terrariums inside.  I didn’t get a good shot of the fish since they were constantly moving but this terrapin was nibbling on a piece of shrimp.

This young alligator didn’t like the way Gin looked at him but he seemed to practically smile at me.

We rode further down the paved park road to a parking lot and walked the boardwalk to the beach.  It’s nice that they have several boardwalks here to get over the dunes.  It’s much better for the dunes, and it’s much better for folks that have difficulty walking in the soft sand like Gin.  She enjoys the ocean and she was just trying to soak it all in since it will probably be quite a while before we get back here.

I can understand why Sherry doesn’t mind running so much when she runs along the shore here.  It’s just beautiful and not many people this time of year.

We were enjoying our walk back to our e-bikes on the boardwalk when this little fella jumped out at us.  He was a little slow so we just enjoyed looking at each other.

After our excursion, we sat outside to watch the Panthers lose another game.  I’ve always said that your team is only as good as your back-ups because there will be injuries throughout the season.  While the game was on, Gin got the turkey in the GE Roaster so that we could eat our Thanksgiving meal early.  We give thanks every day so why not.  The roaster cooks a good turkey.  We’ve also cooked a roast in it.  We set it outside on the grill table so that the interior of the MH won’t get so hot and we don’t use LP.  We had cooked a couple of sweet potatoes over the campfire the night before and Gin fixed the cranberry relish before we left the house.  The dressing and spinach was cooked fresh in the MH.  We’ll be eating leftovers for a few days but we enjoy a quick, good meal.

I wanted to get a shot of the full moon when I took the trash out but it was too cloudy.  I think tomorrow will be another beautiful day.  Maybe we can ride the great paved bikeway they have here that runs beside Hwy 17.  We take one day at a time and enjoy what comes our way.

Thankful Thursday

Today I'm thankful for friends.
I've had the opportunity to live several places in my life.
I started out in Sin City.
Traveled to Heaven.
Did a brief stint in the Promised Land.
And now I call Paradise home.

Any guesses?

Born in Las Vegas.
Moved to Iowa when I was twelve.
Went to college, got married, and did the newlywed years in Utah.
And for the past 7 years I've called SoCal home.

And over the years, through the adventures, I've met a lot of fabulous people.
Sylvia, Brandi, and Jenna in Las Vegas.
Julie, Christine, Cindy, Dawn, and Lena in Iowa.
The A. Richards Girls, Stadium Terrace Chicks, Romance Garden Crew,
BYU Operators Posse, ECE Babes, and Eaglecrest Sweethearts in Utah.

I'm super blessed.

So, as I mentioned yesterday,
this weekend was totally awesomespice
because I got to meet three fantastic ladies.

I was pleasantly ecstatic surprised to see that Kara-Noel of Eli's Lids and She's Crafty.
I felt like a giddy school girl when I tapped her on the should
and said, "Are you Kara-Noel?"
Luckily, she didn't think I was too much of stalker and chatted with me
for a little while about such topics as how we love NieNie,
how to avoid double chins in photos,
and how we adore blogging.


She is such an awesome lady and she gifted JT with a Lid of his own!
Yeah, she's cool like that.(I had the windows open, he sad he was cold, and dressed himself.)

And finally, I got to meet Kristin of Lu Bird Baby.
I forgot to take a picture with her!
But I did get her info and hopefully we'll get together soon.
